I modified this recipe from one I found on the Morningstar Farms website. Even though we are not vegetarians, I discovered that using vegetarian products eliminates saturated fats without sacrificing protein. And they are really tasty!
The broccoli slaw is a delicious combination of broccoli, carrots and cabbage (talk about healthy!), shredded and ready to use. Look for it near the prepackaged salad greens.
3 green onions, cut into 2-inch pieces
Nonstick cooking spray
1 package Morningstar Farms Chik'n Strips
1/2 package broccoli slaw
2 tablespoons hoisin sauce
Flour or whole wheat tortillas (as low-fat as you can find), warm
1. Spray large skillet or wok with nonstick cooking spray. Cook and stir green onions, about 2 minutes.
2. Add chicken strips. Cook and stir over medium-high heat, about 2 minutes.
3. Stir in broccoli slaw mix and hoisin sauce. Cook and stir until heated through, about 2 minutes.
4. Spoon 1/3 of mixture onto each tortilla just below center, fold bottom edge up and wrap.
