Low Fat "Beef" Stir Fry

By using vegetarian "beef" strips, you cut out a lot of fat and calories. Plus they have a nice seasoning on them. The hoisin sauce really adds flavor and a bit of spice, but without adding any fat. (Look for this in the Asian section of the grocery store)

1 package Morningstar Farms Beef Strips
Nonstick cooking spray (I use Pam Olive Oil)
1 package frozen stir-fry vegetables
2 tablespoons hoisin sauce
Rice

1. Spray non-stick skillet or wok with nonstick cooking spray. Add beef strips and heat over medium-high until heated through, about 3-4 minutes. Remove beef strips.

2. Spray skillet again with Pam. Add stir-fry vegetables and cook on high heat 3-5 minutes, stirring continuously.

3. Stir in hoisin sauce and beef strips. Cook 2 more minutes, stirring continuously.

4. Serve over rice.
